Vineyards: the vines, over 50 years old, grow on predominantly clay soils with a good percentage of limestone, rich in mineral elements; they are mostly managed with pergola and spur cordon training systems. Harvesting is done manually from the end of September to the first decade of October.
Vinification: maceration on the skins for twenty-four hours followed by soft pressing and cold settling. Alcoholic fermentation and aging in steel, no filtration or clarification: Alcohol: 12.50% ABV.
Organoleptic examination:
Color: salmon pink with blush reflections
Aroma: hints of white flowers and rose, with fruity notes of strawberry and plum.
Taste: Freshness and fruitiness combined with a pleasant acidity, liveliness on the palate. Balance, lightness, and elegance.
Pairings: perfect with cured meats and cheeses, even aged, with fish appetizers and traditional first courses.
Serving Temperature: 11-13°C.
